What is Sous Vide Cooking?

Sous vide is a cooking method that involves vacuum-sealing food in a bag and cooking it in a water bath at a precise, controlled temperature. This technique allows for even cooking and enhances flavors, making it ideal for desserts like churros that benefit from a tender interior.

Ingredients for Sous Vide Churros

  • 1 cup water
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1 cup all-purpose flour
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • Vegetable oil for frying

Ingredients for Warm Chocolate Dipping Sauce

  • 1 cup heavy cream
  • 1 cup chopped dark chocolate
  • 1 tablespoon butter
  • 1 teaspoon vanilla extract

Preparing the Churros

Start by heating water, sugar, salt, and butter in a saucepan until boiling. Once boiling, remove from heat and stir in the flour until a dough forms. Let it cool slightly. Beat in eggs one at a time, then add vanilla extract. Transfer the dough to a piping bag fitted with a star tip.

Seal the piping bag in a vacuum bag and cook in a sous vide water bath at 85°C (185°F) for 45 minutes. After cooking, carefully remove the dough from the bag and pipe it into hot oil in small, churro-shaped pieces. Fry until golden brown and crispy. Drain on paper towels.

Making the Warm Chocolate Dipping Sauce

Heat the heavy cream in a saucepan until just simmering. Pour over chopped dark chocolate, add butter and vanilla, then stir until smooth and glossy. Keep warm until ready to serve.
