Ingredients

  • 4 large yellow onions, thinly sliced
  • 2 tablespoons olive oil
  • 4 cups beef or vegetable broth
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 8 slices of baguette
  • 1 ½ cups grated Gruyère cheese
  • Optional: a splash of dry white wine

Preparation Steps

Start by caramelizing the onions. In a large skillet, heat olive oil over medium heat. Add sliced onions, a pinch of salt, and cook slowly, stirring occasionally, until they are deeply caramelized, about 30-40 minutes. This step develops the rich sweetness essential for the soup.
