Discover how to prepare a delicious and perfectly cooked ham using the sous vide method, topped with a sweet and tangy pineapple glaze. This technique ensures the ham remains moist and flavorful, making it an ideal centerpiece for any celebration or family meal.

What Is Sous Vide Cooking?

Sous vide is a cooking technique that involves sealing food in a vacuum bag and cooking it in a water bath at a precisely controlled temperature. This method allows for even cooking and helps retain the natural juices and flavors of the food.

Ingredients Needed

  • 1 fully cooked ham (bone-in or boneless)
  • 1 cup pineapple juice
  • 1/2 cup honey
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 cup crushed pineapple (fresh or canned)
  • 1 tablespoon cornstarch (optional, for thickening)

Preparation Steps

Start by sealing the ham in a vacuum bag. Set your sous vide cooker to 140°F (60°C) for a tender and juicy result. Submerge the bag in the water bath and cook for 4 hours. This gentle heat ensures the ham is heated evenly without drying out.

Making the Pineapple Glaze

While the ham cooks, prepare the glaze. In a saucepan, combine pineapple juice, honey, soy sauce, and minced garlic. Bring to a simmer over medium heat. Add crushed pineapple and cook for another 10 minutes, allowing the flavors to meld. For a thicker glaze, stir in cornstarch mixed with a little water and cook until it thickens.

Finishing the Ham

Once the ham has cooked in the sous vide bath, remove it from the bag and pat dry. Preheat your oven to 400°F (200°C). Place the ham on a baking sheet and brush generously with the pineapple glaze. Bake for 15-20 minutes, basting occasionally, until the glaze is caramelized and bubbly.

Serving Suggestions

Slice the ham and serve with extra pineapple glaze on the side. It pairs well with roasted vegetables, mashed potatoes, or a fresh green salad. This dish is perfect for holidays, family dinners, or special occasions.
