Ingredients Needed

  • 4 large apples (such as Granny Smith or Fuji)
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1 sheet puff pastry, thawed
  • 1 teaspoon vanilla extract
  • Optional: a pinch of cinnamon or nutmeg

Preparation Steps

Preparing the Apples

Peel, core, and cut the apples into halves or quarters, depending on size. Toss them with vanilla extract and optional spices for added flavor.

Making the Caramel

In a heatproof bag suitable for sous vide, combine sugar and butter. Seal the bag tightly, ensuring no air remains. This mixture will melt during cooking, creating a rich caramel.

Cooking with Sous Vide
