- 1 pound smoked sausage, sliced
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 3 celery stalks, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 1/2 cups long-grain rice
- 3 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Preparation Steps
Start by heating the olive oil in a large skillet or Dutch oven over medium heat. Add the sliced sausage and cook until browned, about 5 minutes. Remove the sausage and set aside.
In the same pan, add the chopped onion, bell pepper, and celery. Sauté until the vegetables are tender and fragrant, about 5 minutes. Add the minced garlic and cook for another minute.
Stir in the Cajun seasoning, smoked paprika, cayenne pepper, salt, and pepper. Cook for 1 minute to release the spices’ aroma.
Add the diced tomatoes, rice, and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and has absorbed most of the liquid.
In the last 5 minutes of cooking, add the cooked sausage and shrimp. Cover and cook until the shrimp turn pink and are cooked through, about 5 minutes.
Once done, remove from heat and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
