Perfect for a family dinner or a special gathering, this recipe is easy to prepare and customizable to your taste. Follow these step-by-step instructions to create an authentic Spanish-inspired meal.

Ingredients Needed

  • 4 large bell peppers (red, yellow, or green)
  • 1 cup cooked rice
  • 1/2 pound ground beef or turkey
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 can diced tomatoes (14 oz)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil
  • Fresh parsley or cilantro for garnish

Preparation Steps

1. Prepare the Bell Peppers

Wash the bell peppers thoroughly. Cut off the tops and remove the seeds and membranes. Lightly brush the outside with olive oil and set aside.

2. Make the Filling

In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onions and minced garlic; sauté until translucent. Add ground meat and cook until browned. Stir in diced tomatoes, smoked paprika, cumin, salt, and pepper. Let simmer for 5 minutes. Remove from heat and mix in cooked rice.

3. Stuff the Peppers

Fill each bell pepper with the prepared mixture, pressing down gently. Place the stuffed peppers upright in a baking dish.

4. Bake the Peppers

Preheat your oven to 375°F (190°C). Cover the baking dish with foil and bake for 30-35 minutes, until peppers are tender. Remove foil and bake for an additional 5 minutes to slightly brown the tops.

Serving and Garnishing

Let the peppers cool for a few minutes before serving. Garnish with chopped fresh parsley or cilantro for added flavor and color. These stuffed peppers pair well with a side salad or crusty bread.
