Indonesian Chicken and Coconut Curry, known as Opor Ayam, is a flavorful and comforting dish enjoyed across Indonesia. Its rich, aromatic sauce made from coconut milk and spices makes it a favorite for family gatherings and special occasions. This step-by-step guide will help you prepare authentic Opor Ayam at home.
Ingredients Needed
- 1 kg chicken (preferably bone-in pieces)
- 400 ml coconut milk
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 2 bay leaves
- 2 tablespoons oil
- Salt and sugar to taste
Spice Paste Ingredients
- 6 shallots
- 4 garlic cloves
- 3 candlenuts (or macadamia nuts)
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon cumin powder
- 1 small piece of ginger (about 1 inch)
Preparation Steps
1. Prepare the Spice Paste
Blend shallots, garlic, candlenuts, ginger, turmeric, coriander, and cumin into a smooth paste using a food processor or mortar and pestle. Add a little water if needed to facilitate blending.
2. Sauté the Spice Paste
Heat oil in a large pot over medium heat. Add the spice paste and cook until fragrant, about 3-5 minutes. Stir constantly to prevent burning.
3. Add Chicken and Aromatics
Add chicken pieces to the pot. Sear until they are lightly browned. Then, add lemongrass, kaffir lime leaves, and bay leaves. Stir to coat the chicken with the spices and aromatics.
4. Pour in Coconut Milk and Simmer
Pour in coconut milk and season with salt and a pinch of sugar. Bring to a gentle boil, then reduce the heat to low. Cover the pot and let it simmer for about 45 minutes, or until the chicken is tender and cooked through.
5. Serve
Remove the lemongrass and lime leaves before serving. Opor Ayam is best enjoyed with steamed rice and a side of vegetables or sambal for added flavor. Enjoy your authentic Indonesian chicken and coconut curry!
