Making authentic cannoli shells using vintage molds is a delightful process that combines tradition and craftsmanship. These crispy, sweet shells are the perfect vessel for creamy ricotta filling, making them a favorite treat in Italian desserts. This guide will walk you through each step to create perfect cannoli shells at home.

Gather Your Ingredients and Tools

  • All-purpose flour
  • Sugar
  • Salt
  • Eggs
  • Vinegar or white wine
  • Butter or shortening
  • Vegetable oil (for frying)
  • Vintage cannoli molds

Prepare the Dough

In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of sugar, and a pinch of salt. Add 1 beaten egg, 1 tablespoon of vinegar, and 2 tablespoons of melted butter. Mix until the dough comes together. Knead the dough on a floured surface until smooth and elastic, about 5-7 minutes. Wrap it in plastic wrap and let it rest for 30 minutes.

Roll Out and Shape the Shells

Divide the rested dough into small portions. Roll each portion into a thin sheet, about 1/8 inch thick. Using a round cutter or glass, cut out circles approximately 4 inches in diameter. Wrap the dough circles around the vintage molds, sealing the edges with a little beaten egg or water.

Fry the Cannoli Shells

Heat vegetable oil in a deep pan to 350°F (175°C). Carefully slide the molds with the dough into the hot oil. Fry until the shells are golden brown, about 2-3 minutes. Using tongs, remove the molds from the oil and let the shells drain on paper towels. Allow them to cool slightly before gently removing the molds.

Finish and Fill

Once cooled, fill the shells with a sweet ricotta mixture. You can use a piping bag for neatness. Traditionally, cannoli are garnished with chopped pistachios or chocolate chips. Serve immediately for the best crispiness and flavor.
