Gather Your Ingredients and Equipment

  • Fresh milk and heavy cream
  • Sugar and egg yolks

  • Mixing bowls and utensils

Prepare the Gelato Base

Start by heating the milk and cream in a saucepan over medium heat. In a separate bowl, whisk together the egg yolks and sugar until smooth. Slowly pour a small amount of the hot milk mixture into the eggs to temper them, then pour everything back into the saucepan.
