What is Kombucha?

Kombucha is a fermented tea drink made with sweetened tea and a symbiotic culture of bacteria and yeast, known as a SCOBY. It has a tangy flavor and offers health benefits due to its probiotics.

Ingredients and Equipment

  • 1 SCOBY
  • 1 cup of organic sugar
  • 8 bags of black or green tea
  • 2 liters of filtered water
  • 1 cup of starter tea (from a previous batch or store-bought unpasteurized kombucha)
  • Glass jar (1-gallon size)
  • Cloth cover and rubber band
  • Plastic or wooden stirring utensil
  • Bottles for storing finished kombucha

Step 1: Prepare the Sweet Tea

Boil the filtered water and steep the tea bags for about 15 minutes. Remove the tea bags and stir in the sugar until fully dissolved. Allow the sweet tea to cool to room temperature.

Step 2: Combine Ingredients

Pour the cooled sweet tea into your glass jar. Add the starter tea and gently place the SCOBY into the jar. Cover the opening with a cloth and secure it with a rubber band.

Step 3: Fermentation

Place the jar in a warm, dark spot away from direct sunlight. Allow it to ferment for 7 to 14 days, depending on your taste preference. Taste the kombucha after a week to check for desired acidity.

Step 4: Bottling and Second Fermentation

Remove the SCOBY and save some starter tea for your next batch. Pour the fermented kombucha into bottles, leaving some space at the top. You can add fruit or herbs for flavor. Seal the bottles and leave them at room temperature for 2-5 days to carbonate.

Step 5: Refrigerate and Enjoy

Once carbonated, refrigerate the bottles to stop fermentation. Serve your homemade kombucha chilled and enjoy its tangy, fizzy goodness. Repeat the process to make your next batch!
