Ingredients Needed

  • 1 pound fresh mushrooms (button, cremini, shiitake, or mixed)
  • 1 onion, chopped
  • 2 cloves garlic, smashed
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups water
  • 2 tablespoons soy sauce or tamari (optional)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Preparation Steps

Start by cleaning the mushrooms thoroughly. Slice or chop them into manageable pieces. This helps extract more flavor during cooking.

In a large pot, heat a little oil over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5 minutes until the vegetables start to soften.
