Making your own wild fermented sauerkraut at home is a rewarding process that combines simple ingredients with natural fermentation. This guide will walk you through each step to create delicious, probiotic-rich sauerkraut.

Gather Your Ingredients and Equipment

  • Fresh green cabbage (about 1 medium head)
  • Sea salt or non-iodized salt (about 1-3 tablespoons)
  • Optional: Carrots, garlic, or other vegetables for flavor
  • Clean fermentation jar or croc
  • Knife and cutting board
  • Grater (if adding vegetables)
  • Weight or small jar to keep cabbage submerged
  • Cloth cover or lid

Preparing the Cabbage

Start by removing outer leaves from the cabbage. Slice the cabbage into thin strips using a knife or a mandoline. If adding carrots or other vegetables, grate or chop them finely.

Salting and Massaging

Place the cabbage (and other vegetables) in a large bowl. Sprinkle the salt evenly over the cabbage. Using clean hands, massage and squeeze the mixture for about 5-10 minutes until the cabbage releases its juices and becomes soft.

Packing the Jar

Transfer the salted cabbage into your fermentation jar. Pack it down firmly with your fist or a tamper, ensuring there are no air pockets. The cabbage should be submerged under its own brine.

Adding Weights and Covering

Place a weight or small jar on top of the cabbage to keep it submerged. Cover the jar with a cloth or loose lid to allow gases to escape while preventing dust and insects from entering.

Fermentation Process

Leave the jar at room temperature (around 65-75°F) for 1 to 4 weeks. Check daily to ensure the cabbage remains submerged and skim off any scum or mold that may form on the surface. The longer it ferments, the more tangy and complex the flavor.

Enjoying Your Sauerkraut

Once the fermentation reaches your desired taste, remove the weight and transfer the sauerkraut to the refrigerator. It can be stored for several months. Use it as a side dish, in sandwiches, or as a probiotic boost to your meals.
