Spanish croquetas are delicious, crispy snacks that are perfect for parties or a tasty appetizer. Making them at home can be simple if you follow these step-by-step instructions. You can fill them with ham or chicken, depending on your preference. Let’s get started!

Ingredients Needed

  • 100g cooked ham or shredded chicken
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 tablespoons all-purpose flour
  • 1 cup milk
  • 2 eggs
  • 1 cup breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil for frying

Preparation Steps

1. Prepare the Filling

In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Add the shredded ham or chicken, cooking for another 2-3 minutes. Remove from heat and set aside.

2. Make the Béchamel Sauce

In the same skillet, add 2 tablespoons of butter or olive oil. Stir in the flour and cook for 1-2 minutes to form a roux. Gradually pour in the milk, whisking constantly to prevent lumps. Cook until the mixture thickens, about 5 minutes. Season with salt and pepper.

3. Combine Filling and Sauce

Mix the cooked meat into the béchamel sauce. Stir well to combine. Transfer the mixture to a bowl and let it cool for about 30 minutes, or until firm enough to shape.

4. Shape the Croquetas

Once cooled, take small portions of the mixture and shape them into cylinder or oval shapes. Prepare three shallow dishes: one with beaten eggs, one with breadcrumbs, and optionally, one with flour for coating.

5. Coat and Fry

Dip each croqueta into the beaten eggs, then roll in breadcrumbs until fully coated. Heat vegetable oil in a deep fryer or large pan to 180°C (356°F). Fry the croquetas in batches until golden brown, about 3-4 minutes. Drain on paper towels.

Serving and Tips

Serve the croquetas hot with a side of aioli or your favorite dipping sauce. For a healthier option, bake them in a preheated oven at 200°C (392°F) for 15-20 minutes until crispy. Remember to keep the filling cold before shaping to prevent sticking and make shaping easier.
