Discover how to make perfectly poached pears using the sous vide method. This technique ensures the pears are tender, flavorful, and infused with vanilla and cinnamon. Follow these step-by-step instructions to create a delicious dessert that impresses every time.
Ingredients Needed
- 4 ripe pears
- 1 vanilla bean or 1 teaspoon vanilla extract
- 2 cinnamon sticks
- 1 cup water
- 1/2 cup sugar
- Optional: lemon slices for added flavor
Preparation Steps
1. Prepare the Pears
Peel the pears, leaving the stems intact for presentation. Core them if desired, but it’s optional. Slice the vanilla bean in half lengthwise if using fresh vanilla.
2. Make the Poaching Syrup
In a small saucepan, combine water, sugar, vanilla (or vanilla extract), and cinnamon sticks. Heat over medium until the sugar dissolves completely. Remove from heat.
3. Seal the Pears
Place the pears in a vacuum-sealable bag or a resealable zip-lock bag. Pour the warm syrup over the pears, ensuring they are fully submerged. Remove excess air if using a zip-lock bag.
4. Set Up the Sous Vide Cooker
Preheat your sous vide water bath to 85°C (185°F). Submerge the sealed bag in the water, making sure it is fully covered. Clip the bag to the side if necessary to prevent floating.
5. Cook the Pears
Cook the pears for 45-60 minutes. The longer you cook, the softer they become. Check for tenderness by piercing with a fork.
Serving Suggestions
Remove the pears from the bag carefully and serve warm or chilled. Drizzle with some of the poaching syrup and garnish with fresh herbs or whipped cream if desired. These pears pair beautifully with vanilla ice cream or yogurt for a delightful dessert.
