Artichokes are a delicious and nutritious vegetable that can be enjoyed in many ways, including stuffing and steaming. Properly cleaning and preparing artichokes ensures they taste great and are easy to eat. Follow this step-by-step guide to prepare your artichokes perfectly.

Gather Your Supplies

  • Fresh artichokes
  • Sharp kitchen knife
  • Cutting board
  • Kitchen scissors
  • Lemon
  • Large bowl of water
  • Optional: vegetable peeler

Step 1: Rinse the Artichokes

Start by rinsing the artichokes under cold running water. Use your hands or a soft brush to remove any dirt or debris from the leaves and stem.

Step 2: Trim the Stem

Using a sharp knife, cut about 1 inch off the bottom of the stem. If the stem is thick and woody, use a vegetable peeler to remove the tough outer layer, revealing the tender core.

Step 3: Cut Off the Top

Using the knife, cut about 1/3 of the top of the artichoke off to remove the spiky tips. This makes handling easier and prepares the artichoke for further trimming.

Step 4: Remove Outer Leaves

Peel back the outer leaves to reveal the tender inner leaves. Use your fingers or a spoon to gently pull away any tough, discolored, or damaged leaves. For stuffing, you may want to remove most of the outer leaves.

Step 5: Trim the Inner Edges

Use kitchen scissors to trim the sharp tips from the remaining leaves. Be careful to avoid injury, and trim all the spiky tips for safety and ease of eating.

Step 6: Remove the Choke

Open the artichoke slightly and use a spoon to scoop out the fuzzy choke in the center. This part is inedible and should be discarded. Be gentle to avoid damaging the heart.

Step 7: Prevent Browning

To keep the cut surfaces from browning, rub them with lemon wedges or squeeze lemon juice over the prepared artichokes. Place the prepared artichokes in a bowl of water with lemon to keep them fresh until cooking.

Final Tips

  • Prepare only as many artichokes as you plan to cook at once.
  • Store unwashed artichokes in a plastic bag in the refrigerator if not cooking immediately.
  • Enjoy your artichokes steamed or stuffed with your favorite fillings for a delicious meal.
