Making homemade cannoli shells can be a rewarding experience, especially when using molds to achieve the perfect shape. This step-by-step tutorial will guide you through the process, from preparing the dough to shaping and frying the shells.
Ingredients Needed
- 2 cups all-purpose flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter, softened
- 2/3 cup white wine or Marsala wine
- Vegetable oil for frying
- Cannoli molds
Preparing the Dough
In a large bowl, combine the flour, sugar, salt, and cinnamon. Add the softened butter and mix until crumbly. Gradually pour in the wine, mixing until the dough forms a ball. Knead the dough on a floured surface for about 5 minutes until smooth. Cover and let it rest for 30 minutes.
Shaping the Shells
Divide the dough into small portions. Roll each portion into thin circles about 1/8 inch thick. Wrap a dough circle around a cannoli mold, sealing the edge with a little water to prevent it from opening during frying.
Frying the Shells
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully slide the prepared shells into the hot oil. Fry until golden brown, about 2-3 minutes. Using tongs, remove the shells and drain on paper towels. Allow them to cool slightly before removing the molds.
Finishing Touches
Once cooled, gently remove the molds from the shells. Fill the shells with your favorite ricotta cheese filling and enjoy your homemade cannoli. For added flavor, sprinkle with powdered sugar or mini chocolate chips.
