Ingredients

  • 2 cups of corn dough or maize flour
  • 1 cup of cassava dough or tapioca starch
  • Water
  • 1 pound of fresh okra, sliced
  • 1 large onion, chopped
  • 2 cloves of garlic, minced
  • 2 fresh tomatoes, chopped
  • 1 tablespoon of ground ginger
  • 2 tablespoons of palm oil or vegetable oil
  • Salt and pepper to taste
  • Optional: fish or meat for added flavor

Preparation of Banku

Start by mixing the corn dough and cassava dough in a large bowl. Gradually add water while stirring to create a smooth, lump-free batter. Place the mixture in a pot over medium heat, stirring constantly to prevent lumps. Cook until it becomes thick and stretchy, about 15-20 minutes. Shape into balls or serve directly with the soup.

Preparing the Okra Soup

Heat the oil in a pot over medium heat. Add the chopped onions and garlic, sauté until fragrant. Stir in the chopped tomatoes and cook until soft. Add the sliced okra and ground ginger, cooking for another 10 minutes. Season with salt and pepper. If desired, add cooked fish or meat to enrich the flavor. Simmer until all ingredients are well combined and the soup thickens slightly.
