  • 2 tablespoons soy sauce

Step-by-Step Preparation

Begin by rinsing the pork bones thoroughly to remove any blood or impurities. Place them in a large pot and cover with cold water. Bring to a boil and cook for about 10 minutes. Drain the water and rinse the bones again to ensure a clean broth.

In the same pot, add fresh water and bring to a boil. Add garlic, soy sauce, and a tablespoon of sesame oil. Reduce heat and simmer for 1.5 to 2 hours, skimming off any foam that forms on the surface. This slow simmering process extracts rich flavors from the bones.

Once the broth is flavorful and tender, add potatoes and cook for another 15 minutes until they are soft. Add chopped napa cabbage or bok choy and cook for an additional 5 minutes. Season with salt, pepper, and red pepper flakes to taste.
