Moroccan bread, known as khobz, is a staple in Moroccan cuisine. Its crispy crust and soft interior make it a beloved bread enjoyed at every meal. Baking khobz at home allows you to experience authentic Moroccan flavors and traditions.

Ingredients Needed

  • 3 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 packet of dry yeast (about 2 1/4 teaspoons)
  • 1 cup of warm water
  • 2 tablespoons of olive oil
  • Optional: sesame or nigella seeds for topping

Step-by-Step Baking Process

Start by activating the yeast. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until it becomes frothy. This indicates the yeast is active.

In a large mixing bowl, combine the flour and salt. Make a well in the center and pour in the activated yeast mixture along with olive oil. Mix everything together until a dough forms.

Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.

Preheat your oven to 475°F (250°C). Punch down the risen dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper. If desired, sprinkle sesame or nigella seeds on top and gently press them into the dough.

Using a sharp knife, score the top of the bread with a few shallow cuts. Bake in the preheated oven for 12-15 minutes or until the crust turns golden brown and crispy.

Serving and Tips

Let the khobz cool slightly before slicing. It is best enjoyed fresh, with Moroccan tagines, olives, or simply with butter and honey. For an authentic touch, bake the bread on a preheated baking stone or cast-iron skillet.

Tip: For a softer crust, cover the bread with a clean towel immediately after baking. To keep leftovers fresh, store in a paper bag to maintain some crispness.
